Vegan Creamy Kale Sauce

Creamy, dreamy, and oh-so-delicious, this vegan creamy kale sauce is the perfect way to add a healthy twist to your pasta, rice, or veggie dishes. Made with nutrient-dense kale, it's an excellent source of vitamins A, C, and K, and provides a flavorful and satisfying meal.

Kale is a member of the cabbage family and has been grown for centuries, dating back to the ancient Greeks and Romans. This leafy green is packed with nutrients and is considered a superfood due to its numerous health benefits. It is low in calories, high in fiber, and loaded with antioxidants that help protect against cancer and heart disease.

The ingredients in this creamy kale sauce work together to create a rich, savory and nutrient-packed sauce. Kale, the star ingredient, is not only a great source of fiber, vitamins, and minerals, but also lends a deep, earthy flavor to the sauce. Raw cashews add creaminess and richness, while garlic and nutritional yeast contribute a savory umami flavor. The lemon juice and vegetable broth bring a bright acidity that balances the flavors, while the salt and black pepper provide depth and seasoning. The result is a versatile sauce that can be used in a variety of ways, from pasta to roasted vegetables to dips and spreads. Plus, it's vegan and packed with nutrients, making it a healthy and delicious addition to any meal.

Vegan Creamy Kale Sauce

Ingredients

  • 1 bunch of kale, stems removed and chopped
  • 1/2 cup raw cashews, soaked in water for 2-4 hours and drained
  • 2 cloves of garlic, minced
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable broth or water

Start by boiling a pot of water and blanching the kale for 2-3 minutes, then immediately place the kale in a bowl of ice water to stop the cooking process. Drain the kale and set it aside.

In a blender or food processor, combine the soaked cashews, garlic, nutritional yeast, lemon juice, salt, pepper, and vegetable broth or water. Blend until smooth and creamy.

Add the blanched kale to the blender and blend until the sauce is smooth and well combined. If the sauce is too thick, add more vegetable broth or water to thin it out to your desired consistency.

This vegan creamy kale sauce is a great alternative to traditional cream-based sauces. It's perfect for a quick and easy weeknight dinner, and it's also a great way to add extra nutrients and flavor to your favorite dishes. Try it on pasta, rice, or roasted veggies for a delicious and healthy meal. Enjoy!

  1. I'm very new to veganism so thank you sooooo much for posting this. Pretty good recipe with the potential for greatness! I'm not a huge fan of dill or thyme but I thought I'd make it as stated just to see... good but I think next time I'll reduce the quantity of thyme and dill, increase the garlic and maybe add some onion powder.
I'm excited to try more sauces in the very near future!
