Ingredients:
- 4 sheets of sushi nori seaweed
- 2 cups of sushi rice
- 2 1/2 cups of water
- 1/4 cup of rice vinegar
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 1/2 large sweet potato
- 1 avocado
- Soy sauce
- Wasabi
- Pickled ginger
Instructions:
Rinse the sushi rice with cold water until the water runs clear. Add the rice and 2 1/2 cups of water to a pot with a tight-fitting lid. Bring to a boil over high heat, then reduce heat to low and simmer for 15 minutes. Remove from heat and let sit for 10 minutes.
While the rice is cooking, peel and slice the sweet potato into thin slices. Place on a baking sheet and bake in a preheated oven at 400°F for about 20 minutes or until soft and tender.
In a small saucepan, heat the rice vinegar, sugar, and salt until the sugar dissolves.
When the rice is done, transfer it to a large mixing bowl. Add the vinegar mixture and stir until well combined.
Lay a sheet of nori on a sushi mat with the shiny side facing down. Spread a thin layer of rice on top of the nori, leaving a 1-inch border at the top. Place a few slices of sweet potato and avocado in the center of the rice.
Use the mat to roll up the sushi, starting at the bottom and rolling it tightly. Wet the top border with a little bit of water to seal the roll.
Repeat with the remaining sheets of nori and ingredients.
Cut the sushi into bite-size pieces and serve with soy sauce, wasabi, and pickled ginger.
