Vegan Creamy Kale Sauce

Ingredients

  • 1 bunch of kale, stems removed and chopped
  • 1/2 cup raw cashews, soaked in water for 2-4 hours and drained
  • 2 cloves of garlic, minced
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable broth or water

Start by boiling a pot of water and blanching the kale for 2-3 minutes, then immediately place the kale in a bowl of ice water to stop the cooking process. Drain the kale and set it aside.

In a blender or food processor, combine the soaked cashews, garlic, nutritional yeast, lemon juice, salt, pepper, and vegetable broth or water. Blend until smooth and creamy.

Add the blanched kale to the blender and blend until the sauce is smooth and well combined. If the sauce is too thick, add more vegetable broth or water to thin it out to your desired consistency.

  1. I'm very new to veganism so thank you sooooo much for posting this. Pretty good recipe with the potential for greatness! I'm not a huge fan of dill or thyme but I thought I'd make it as stated just to see... good but I think next time I'll reduce the quantity of thyme and dill, increase the garlic and maybe add some onion powder.
    I'm excited to try more sauces in the very near future!
