Ingredients
- 1/2 cup vinegar
- 1 lb red chili peppers
- 5-6 fresh Serrano chiles
- 1 tbsp sea salt
- 1 tbsp tamari soy sauce
- 1 tbsp raw agave
- 4 cloves garlic
Prepare the peppers: Start by washing and cleaning the red chili peppers and Serrano chiles. Remove the stems from the peppers and chop them into smaller pieces.
Add ingredients to food processor: Add the chopped peppers to a food processor along with the vinegar, sea salt, tamari soy sauce, raw agave, and minced garlic cloves.
Blend the ingredients: Process the mixture in the food processor until it is well combined and has a slightly chunky texture. If you prefer a smoother sauce, you can continue to process until desired consistency is reached.
Allow mixture to sit: Transfer the mixture to a large jar or container, and secure a coffee filter on top with a rubber band. Leave the mixture to sit at room temperature for a few days, allowing the flavors to blend and develop. You should notice some bubbling below the surface, which is an indicator that it's ready.
Adjust consistency: From here, you can process the mixture further, adding water as needed, until you reach the desired consistency.
