Sun-dried Tomato Pesto Sauce

Sun-dried Tomato Pesto Sauce

Ingredients:

  • 1 cup sun-dried tomatoes (not packed in oil)
  • 1/2 cup pine nuts
  • 3 garlic cloves, peeled
  • 1/2 cup fresh basil leaves
  • 1/2 cup vegan Parmesan cheese (optional)
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. In a food processor, pulse the sun-dried tomatoes, pine nuts, and garlic until coarsely chopped.
  2. Add the basil leaves and vegan Parmesan cheese (if using) and pulse again until combined.
  3. With the food processor running, slowly pour in the olive oil until the mixture is smooth.
  4. Season with salt and pepper to taste.
  5. If the sauce is too thick, you can thin it out with a little extra olive oil or water.
