Italian Bean Sauce

Italian-style Bean Sauce

Ingredients:

  • 1 can of cannellini beans, drained and rinsed
  • 2 cloves of garlic, minced
  • 1/4 cup of vegetable broth or water
  • 2 tablespoons of tomato paste
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 2 tablespoons of olive oil

Instructions:

  1. Heat the olive oil in a saucepan over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the drained and rinsed cannellini beans to the saucepan, and stir to combine.
  4. Add the vegetable broth or water to the saucepan, and stir until well combined.
  5. Add the tomato paste, dried basil, and dried oregano to the saucepan, and stir to combine.
  6. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally.
  7. Season with salt and pepper to taste.
  8. Serve over your favorite pasta or vegetables.
