I'll be using jarred sauce for convenience in this recipe, but if you're feeling extra adventurous, feel free to make your own sauce from scratch. Either way, this pasta sauce is guaranteed to be a hit!

This recipe combines the flavors of eggplant, onion, mushrooms, and red wine to create a rich and savory sauce.

Eggplant Spaghetti Sauce

Ingredients
  • 1 eggplant, peeled and diced
  • 1 large onion, chopped
  • 1/4 cup mushrooms, sliced
  • 1/2 cup red wine
  • 2-4 cloves of garlic, pressed
  • 1 large bottle of spaghetti sauce
  • Spices to taste (basil, oregano, pepper)

Instructions

  1. In a large skillet, heat some oil over medium heat.
  2. Add the eggplant and cook until it starts to soften, about 5 minutes.
  3. Add the onions and mushrooms to the skillet and cook until the onions become translucent, about 5 more minutes.
  4. Stir in the garlic and cook for an additional minute.
  5. Pour in the red wine and let it simmer for 2-3 minutes.
  6. Pour in the spaghetti sauce and stir until combined.
  7. Add spices to taste and continue to simmer the sauce for 10-15 minutes.
  8. Serve the sauce over your favorite pasta and enjoy!
