- 6 fresh ancho chilies, finely chopped
- 1 tsp thyme
- 1 tsp paprika
- 1 tsp oregano
- 4 finely chopped garlic cloves
- 2 cups vegetable stock
- 2 tsp cornstarch mixed with 3 tsp cold water
- 2 tsp rice vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
Heat the oil in a large saucepan over medium heat. Add the chopped ancho chilies, thyme, paprika, and oregano. Cook for 2-3 minutes or until fragrant.
Add the chopped garlic to the pan and cook for an additional minute.
