Vegan Cucumber Mint Raita

- 12 oz. silken tofu or plain soy yogurt
- 2 tbsp. lemon juice
- 1 medium cucumber, diced into small chunks
- ¼ cup fresh mint leaves
- 2 tbsp. fresh cilantro
- ½ tsp. ground cumin
- ¼ tsp. salt
Slowly adds the other ingredients, and continue to blend.
Scrape into a serving bowl, cover, and chill.
