Vegan Adobo Sauce

Vegan Adobo Sauce

Ingredients
  • 1 Tbsp oil (olive oil preferred)
  • 6 fresh ancho chilies, finely chopped
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp oregano
  • 4 finely chopped garlic cloves
  • 2 cups vegetable stock
  • 2 tsp cornstarch mixed with 3 tsp cold water
  • 2 tsp rice vinegar
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Heat the oil in a large saucepan over medium heat. Add the chopped ancho chilies, thyme, paprika, and oregano. Cook for 2-3 minutes or until fragrant.

  2. Add the chopped garlic to the pan and cook for an additional minute.

  3. Pour in the vegetable stock and bring to a boil. Reduce heat to low and let the mixture simmer for 10-15 minutes.

  4. In a small bowl, mix together the cornstarch and cold water. Gradually add the mixture to the saucepan, stirring constantly, until the sauce has thickened.

  5. Remove the saucepan from heat and stir in the rice vinegar, salt, and pepper.

  6. Let the sauce cool to room temperature. Once it's cooled, transfer it to a clean jar or container and refrigerate until ready to use.
