Vegan Banana Pudding
- 6 oz soft silken tofu
- 1 ripe banana (the riper the better)
- 1/4 cup plain/vanilla soy milk or water
You can eat it plain as a pudding or pour over pancakes, waffles, fruit salad. Why not try mixing with cooked rice, a dash of cinnamon and raisins for instant rice pudding?
