I often put it on my sandwiches, and it can also be used as a dip with vegetables, or whatever you would like
Tzatziki - Cucumber Dip/Sauce

A quick, simple, and very refreshing dip or sandwich topping.
Makes 2 cups
Time: 20 minutes
- 1 large cucumber
- ½ t salt
- 2 cloves garlic, minced
- 2 t fresh mint, diced
- 2 t fresh dill, diced
- 1¾ c plain soy yogurt
- 2 t lemon juice
- 1 T olive oil
First step is to peel the cucumber, cut it in half lengthwise, and remove the seeds with a spoon. Dice the cucumber, pinch of salt, let sit for 10 minutes, and then drain.
Add the garlic, mint, dill, and yogurt. Mix well, then stir in the remaining ingredients.
This is a wonderful dip that can be served alongside others, and a large selection of vegetables. breads, and crackers. The cucumber also compliments spicy dishes as a way to cool down the pallet.
